  • 1/4 cup granola
  • 2 tablespoons chopped pecans or walnuts
  • Fresh whipped cream (optional, for topping)
  • Additional pumpkin pie spice (for garnish, optional)

Method
 

  1. Gather your ingredients and tools. You’ll need a medium bowl, a spoon for mixing, and serving bowls for the final presentation.
  2. In your medium bowl, add 1 cup of plain Greek yogurt. Stir until smooth.
  3. Add 1/2 cup of canned pumpkin puree, 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, 1/2 teaspoon of pumpkin pie spice, and 1/4 teaspoon of ground cinnamon. Mix until well combined.
  4. Spoon the pumpkin yogurt mixture into your serving bowls. Top each bowl with 1/4 cup of granola and 2 tablespoons of chopped pecans or walnuts. Optionally, add fresh whipped cream and sprinkle with extra pumpkin pie spice.
  5. Serve immediately or chill in the refrigerator for up to 30 minutes if you prefer it cold.
