Method
 

  1. Gather your ingredients: gluten-free all-purpose flour, unsalted butter, powdered sugar, salt, vanilla extract, and almond extract (if using).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the gluten-free flour, salt, and both extracts, mixing until a soft dough forms.
  3. Transfer the dough to a lightly floured surface and roll it out to about 1/4 inch thick. Cut into desired shapes and place on a baking sheet lined with parchment paper.
  4. Preheat your oven to 350°F (175°C) and bake the cookies for 12-15 minutes, or until the edges are lightly golden.
