Method
 

  1. Gather all ingredients and measure them out.
  2. Preheat the oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  3. Mix dry ingredients in a large bowl: oat flour, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, mash the bananas and mix with honey, oil, eggs, and vanilla.
  5. Combine wet and dry mixtures, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean. Cool for 10 minutes in the pan before transferring to a wire rack.
