Ingredients
  

  • For the Filling:
  • Ground beef or turkey: 1 pound
  • Medium onion chopped: 1
  • Garlic minced: 2 cloves
  • Black beans drained and rinsed: 1 can (15 ounces)
  • Corn drained: 1 can (15 ounces)
  • Diced tomatoes with green chilies: 1 can 10 ounces
  • Chili powder: 1 tablespoon
  • Cumin: 1 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: 1/2 teaspoon
  • For the Topping:
  • Cornbread mix: 1 package 8.5 ounces
  • Milk: 1/3 cup
  • Large egg: 1
  • Shredded cheddar cheese: 1 cup
  • Chopped fresh cilantro: 1/4 cup optional

Method
 

  1. Preheat the oven to 400°F.
  2. Cook Filling: In a large skillet over medium heat, brown the ground beef (or turkey) with the chopped onion and minced garlic until the meat is cooked through. Drain any excess fat.
  3. Season Filling: Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  4. Prepare Cornbread: In a separate bowl, prepare the cornbread mix according to package instructions by combining it with the milk and egg. Stir until just combined.
  5. Assemble: Spread the meat mixture evenly in a greased 9x13-inch baking dish.
  6. Top: Pour the cornbread batter over the top, spreading it gently to cover the meat mixture.
  7. Cheese: Sprinkle the shredded cheddar cheese on top.
  8. Bake: Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
  9. Serve: Let it cool for 5 minutes before serving. Garnish with chopped cilantro if desired.

Notes

Spicier Version: Add diced jalapeños to the meat mixture or use spicy diced tomatoes.
Vegetarian Option: Substitute the ground meat with a plant-based alternative or extra beans and vegetables.
