Sweet Potatoes
  • 2 pounds sweet potatoes Peeled and cubed
  • 0.5 cup milk Whole milk or any milk alternative
  • 0.25 cup unsalted butter Softened
  • 0.5 cup brown sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 cup mini marshmallows

Method
 

  1. Peel and cube the sweet potatoes, then boil them in water until tender, about 15 to 20.
  2. Mix the cooked sweet potatoes with milk, butter, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
  3. Pour the mixture into a greased 9x13-inch baking dish and spread evenly.
  4. Bake at 350°F for 25, then add marshmallows and bake for an additional 10 to 15 until golden brown.
  5. Let cool for a few minutes before serving.
