Baby Carrots
  • 2 pounds baby carrots peeled and trimmed
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Prepare the baby carrots by peeling and trimming them. Set aside.
  2. In a large mixing bowl, combine melted butter, brown sugar, cinnamon, salt, and black pepper. Mix until smooth.
  3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Spread the carrots in a single layer on the baking sheet and drizzle the glaze over them. Toss to coat evenly.
  5. Roast the carrots for 25-30 minutes, stirring halfway through, until tender and caramelized.
  6. Let the carrots cool for a few minutes before serving.
