Dip each cauliflower floret into the batter, allowing excess to drip off, then roll in panko breadcrumbs. Place on a baking sheet.
Preheat oven to 425°F. Bake cauliflower for 25-30 minutes, flipping halfway through.
In a saucepan, combine honey, sriracha, soy sauce, olive oil, and rice vinegar. Heat over medium until well combined.
Remove cauliflower from oven, drizzle with spicy honey sauce, and toss gently. Return to oven for an additional 5 minutes.
