  • 3 pounds chicken pieces mix of legs, thighs, breasts, and wings
  • 2 cups buttermilk for marinating
  • 2 cups all-purpose flour for coating
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional
  • vegetable oil for frying, enough to cover chicken pieces

Method
 

  1. Marinate the chicken pieces in buttermilk for at least 4 hours or overnight.
  2. Prepare the coating by mixing flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper in a bowl.
  3. Heat vegetable oil in a deep skillet or Dutch oven to 350°F.
  4. Dredge marinated chicken in the flour mixture and fry in batches for 12-15 minutes per side until golden brown and cooked through.
  5. Drain the fried chicken on a wire rack or paper towels and let it rest before serving.
