In a large mixing bowl, combine warm water, active dry yeast, and granulated sugar. Stir gently and let it sit for 5 minutes until foamy.
Add all-purpose flour and salt to the yeast mixture. Mix until a dough forms, then knead on a floured surface for 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 60 minutes until doubled in size.
Punch down the dough, divide into 8 pieces, roll each into a 24-inch rope, and shape into pretzels.
Boil 10 cups of water, add baking soda, and boil each pretzel for 30 seconds on each side. Remove with a slotted spoon and place on a baking sheet.
Preheat oven to 450°F. Brush each pretzel with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.
