Crust
  • 1.5 cups gluten-free graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar
  • 1 15-ounce can pumpkin puree
  • 0.75 cups coconut milk (canned)
  • 0.75 cups brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 0.5 teaspoon salt

Method
 

  1. Preheat your oven and prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into a 9-inch pie pan and bake for 8-10 minutes.
  2. While the crust cools, whisk together pumpkin puree, coconut milk, brown sugar, eggs, vanilla, pumpkin pie spice, and salt until smooth.
  3. Pour the filling into the cooled crust and spread evenly. Bake for 45-50 minutes until set.
  4. Allow the pie to cool at room temperature for at least 2 hours before refrigerating for a few hours or overnight.
