- Preheat your oven and prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into a 9-inch pie pan and bake for 8-10 minutes.
- While the crust cools, whisk together pumpkin puree, coconut milk, brown sugar, eggs, vanilla, pumpkin pie spice, and salt until smooth.
- Pour the filling into the cooled crust and spread evenly. Bake for 45-50 minutes until set.
- Allow the pie to cool at room temperature for at least 2 hours before refrigerating for a few hours or overnight.
