Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the baking soda, salt, and granulated sugar. Stir until well mixed.
Add the creamy peanut butter to the dry mixture and blend until smooth and creamy.
Crack the egg into the bowl and pour in the vanilla extract. Mix until well combined.
Gradually add the dry mixture to the wet mixture, stirring gently to form a dough.
Scoop out the dough and roll it into small balls, then coat each ball in granulated sugar.
Place the sugar-coated dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart. Bake for 10-12 minutes.
Press a chocolate Kiss into the center of each cookie as soon as they come out of the oven. Let cool for about 5 minutes before transferring to a wire rack.
