Fresh Peaches
  • 3 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar, divided
  • 1 teaspoon lemon juice
  • 1 cup all-purpose gluten-free flour blend
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Method
 

  1. Prepare the peaches by peeling and slicing them. Combine with 1/2 cup of sugar and lemon juice, toss gently, and let sit for 10 minutes.
  2. Make the cobbler batter by whisking together flour, baking powder, salt, 1/2 cup sugar, cinnamon, and nutmeg. Add milk, melted butter, and vanilla, and stir until just combined.
  3. Pour the batter into a greased 9x13-inch baking dish. Spoon the marinated peaches and juice over the batter without stirring.
  4. Preheat the oven to 350°F. Bake for 40-45 minutes until golden brown and a toothpick comes out clean. Let cool for 10 minutes before serving.
