Ingredients
  

Crust
  • 8 ounces gluten-free chocolate sandwich cookies, crushed
  • 4 tablespoons unsalted butter, melted
Filling
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup heavy cream
  • 8 pieces gluten-free chocolate sandwich cookies, chopped (for topping)

Method
 

  1. Prepare the crust by mixing crushed cookies with melted butter and pressing into a greased 9-inch springform pan.
  2. Make the filling by beating cream cheese, sugar, and vanilla until smooth, then add eggs one at a time, followed by sour cream.
  3. Pour the filling over the crust and bake in a water bath at 325°F for 50-60 minutes until edges are set.
  4. Cool in the oven for 1 hour, then refrigerate for at least 4 hours before serving.
