Slice the beef sausage into bite-sized pieces, chop the cabbage, slice the onion and bell peppers, and mince the garlic.
Heat olive oil in a large skillet or wok over medium heat. Add the sliced beef sausage and cook for 5-7 minutes until browned.
Add the sliced onion and bell peppers to the skillet and stir-fry for 3-4 minutes until they begin to soften. Then add the chopped cabbage and minced garlic.
Season with smoked paprika, salt, and black pepper. Stir well and cook for an additional 5-7 minutes until the cabbage is tender but still crunchy.
Drizzle in soy sauce if desired, mix well, and cook for another minute. Garnish with chopped green onions and serve hot.
