Ingredients

Brownie Ingredients
  • 1 cup unsalted butter 2 sticks, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies for topping

Equipment

  • 9x13 inch baking pan

Method

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking pan with butter or cooking spray.
  3. Melt the unsalted butter in a large mixing bowl. Add the granulated sugar and stir until well combined. Then, add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla and peppermint extracts.
  4. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined. Fold in the semi-sweet chocolate chips.
  5. Pour the brownie batter into the prepared baking pan, spreading it evenly. Sprinkle the crushed peppermint candies on top.
  6. Bake for 25-30 minutes. Check for doneness with a toothpick; it should come out with a few moist crumbs.
  7. Let the brownies cool in the pan for at least 15 minutes before cutting into squares.
