Ingredients
  

Dry Ingredients
  • 2 cups gluten-free rolled oats
  • 1 cup all-purpose gluten-free flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.75 cup unsalted butter, softened
  • 0.75 cup brown sugar, packed
  • 0.5 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup butterscotch chips
  • 0.5 cup chopped nuts (optional) Optional for added crunch

Method
 

  1. Preheat your oven to 350°F.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes. Beat in vanilla and eggs one at a time.
  4. Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in butterscotch chips and nuts if using.
  5. Drop rounded tablespoons of dough onto a baking sheet, spaced about 2 inches apart.
  6. Bake for 10-12 minutes until edges are golden and centers are soft.
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
