Method
 

  1. Gather all your ingredients to make the process smoother.
  2. In a large mixing bowl, combine the dry ingredients: gluten-free flour, salt, baking soda, and instant yeast. Mix thoroughly.
  3. In a separate bowl, mix the warm water, olive oil, and honey or maple syrup until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a sticky dough forms.
  5. Cover the bowl and let the dough rise at room temperature for 1 to 2 hours, until doubled in size.
  6. Lightly grease your hands with olive oil and shape the dough into a round loaf on a floured surface.
  7. Preheat your oven to 450°F and place a Dutch oven inside to preheat for about 30 minutes.
  8. Carefully remove the hot Dutch oven, grease it lightly, and transfer the dough inside. Cover and bake for 30 minutes.
  9. Remove the lid and bake for an additional 15 to 20 minutes until golden brown.
