Chicken
  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes optional for a spicy kick
  • 0.25 cup olive oil
  • 0.25 cup balsamic vinegar
  • 0.25 cup grated Parmesan cheese
  • 1 cup cherry tomatoes halved
  • 0.25 cup fresh basil leaves chopped for garnish

Method
 

  1. Pat the chicken dry with paper towels and season with salt, black pepper, garlic powder, onion powder, dried oregano, dried basil, and red pepper flakes.
  2. Marinate the chicken in a mixture of olive oil and balsamic vinegar for at least 30 minutes.
  3. Heat a large oven-safe skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
  4. Drizzle balsamic vinegar over the chicken, sprinkle with Parmesan cheese and halved cherry tomatoes.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F.
  6. Let the chicken rest for 5 minutes before garnishing with fresh basil leaves and serving.
