Method
 

  1. Rinse chicken thighs under cold water, pat dry, and season with salt and pepper.
  2. Chop onion, slice bell pepper, and mince garlic.
  3. Combine diced tomatoes, tomato paste, and chicken broth in the crockpot. Stir in oregano, basil, and red pepper flakes. Add sautéed onion, bell pepper, and garlic, then place seasoned chicken on top.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Shred chicken with forks, return to sauce, and serve hot garnished with parsley.
