Preheat your oven to 350°F. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until golden brown. Let cool completely.
In a large mixing bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well incorporated. Fold in mashed bananas and banana extract.
In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the banana cream cheese mixture. Pour over the cooled crust and smooth the top. Refrigerate for at least 4 hours until set.
Once set, remove from the springform pan. Top with sliced bananas and whipped cream if desired. Serve chilled.
