Wash the baby carrots and fresh green beans thoroughly. Trim the ends of the green beans and cut the carrots if desired. Place them in a large mixing bowl.
In a small bowl, combine the olive oil, honey, salt, black pepper, garlic powder, and fresh lemon juice. Whisk until well blended.
Pour the honey glaze over the prepared carrots and green beans. Toss until evenly coated. Spread the vegetables on a baking sheet lined with parchment paper.
Preheat the oven to 400°F (200°C) and roast the vegetables for 20-25 minutes, stirring halfway through until tender and slightly caramelized.
Transfer the roasted vegetables to a serving dish and sprinkle with chopped parsley before serving.
