Method
 

  1. Preheat your oven to 400°F and prepare the mini muffin tin.
  2. In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Whisk until well blended.
  3. In a small bowl, mix softened butter and honey to prepare the honey butter.
  4. In another bowl, whisk together milk, vegetable oil, eggs, and honey. Pour into dry ingredients and stir gently until just combined.
  5. Fill each muffin cup about two-thirds full with batter. Bake for 12-15 minutes until golden brown.
  6. Let the poppers cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm with honey butter.
