Method
 

  1. Prep all ingredients by chopping the onion and bell pepper, and slicing the potatoes thinly.
  2. Grease a 9x13-inch baking dish. Layer half of the sliced potatoes at the bottom, followed by half of the beef mixture. Repeat with remaining potatoes and beef mixture.
  3. Pour beef broth evenly over the casserole. Cover with aluminum foil and bake at 350°F for 45 minutes.
  4. Remove foil, sprinkle cheese on top, and bake for an additional 15 minutes until cheese is melted and bubbly.
  5. Let cool for a few minutes before serving.
