Method
- Prep all ingredients by chopping the onion and bell pepper, and slicing the potatoes thinly.
- Grease a 9x13-inch baking dish. Layer half of the sliced potatoes at the bottom, followed by half of the beef mixture. Repeat with remaining potatoes and beef mixture.
- Pour beef broth evenly over the casserole. Cover with aluminum foil and bake at 350°F for 45 minutes.
- Remove foil, sprinkle cheese on top, and bake for an additional 15 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
