  • 2 cups corn kernels fresh, frozen, or canned (drained)
  • 1 cup milk whole milk preferred
  • 1 cup heavy cream
  • 3 large eggs
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon baking powder
  • 1 cup cornmeal

Method
 

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine corn kernels, milk, heavy cream, and eggs. Whisk until well blended.
  3. Stir in granulated sugar, melted butter, vanilla extract, salt, black pepper, and baking powder. Mix until fully combined, then gradually add cornmeal, stirring gently.
  4. Pour the mixture into a greased 2-quart baking dish and smooth the top.
  5. Bake for 45-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean. Let cool for 10 minutes before serving.
