Prepare a 9x13-inch baking pan by greasing it or lining it with parchment paper.
In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together for 2-3 minutes until light and fluffy.
Add the eggs, vanilla extract, and almond extract (if using) to the butter mixture and mix until well combined. Gradually add the dry ingredients, stirring until just combined.
If using sprinkles, gently fold them into the dough. Spread the batter evenly into the prepared baking pan.
Bake for 20-25 minutes until lightly golden around the edges and a toothpick inserted in the center comes out clean.
Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
