Ingredients

Dry Ingredients
  • 2.5 cups gluten-free all-purpose flour This is the base of your cookie bars. It provides structure and a soft texture.
  • 1 teaspoon baking powder This helps the bars rise, giving them a light and fluffy feel.
  • 0.5 teaspoon baking soda This works alongside the baking powder to create a perfect balance of leavening.
  • 0.25 teaspoon salt A pinch of salt enhances the sweetness and balances the flavors.
Wet Ingredients
  • 1 cup unsalted butter, softened Butter adds richness and moisture, making the bars deliciously tender.
  • 1 cup granulated sugar This sweetens the bars and contributes to their chewy texture.
  • 0.5 cup brown sugar, packed Brown sugar adds a hint of caramel flavor and moisture.
  • 2 large eggs Eggs bind the ingredients together and help the bars rise.
  • 2 teaspoons vanilla extract This adds a warm, sweet flavor that complements the sugar.
  • 0.5 teaspoon almond extract (optional) For those who enjoy a nutty flavor, this is a delightful addition.
  • 0.5 cup sprinkles (optional for decoration) Sprinkles add a fun and festive touch, perfect for celebrations!

Equipment

  • 9x13 inch baking pan
  • mixing bowls
  • electric mixer

Method

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9x13-inch baking pan by greasing it or lining it with parchment paper.
  3. In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together for 2-3 minutes until light and fluffy.
  5. Add the eggs, vanilla extract, and almond extract (if using) to the butter mixture and mix until well combined. Gradually add the dry ingredients, stirring until just combined.
  6. If using sprinkles, gently fold them into the dough. Spread the batter evenly into the prepared baking pan.
  7. Bake for 20-25 minutes until lightly golden around the edges and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
