  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup dried cherries (or maraschino cherries, drained and chopped)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Then, add in the large egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Fold in the semi-sweet chocolate chips and dried cherries until evenly distributed.
  6. Using a tablespoon, scoop out portions of the dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, until the edges are set but the centers still look soft.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
