Preheat your oven to 350°F (175°C).
Gather all your ingredients. Dice the bell peppers and onion into small pieces. If using fresh spinach, chop it into bite-sized pieces.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the turkey sausage, diced bell peppers, and onion. Cook for about 7-10 minutes until browned and vegetables are softened. Add chopped spinach and cook for an additional 2 minutes.
In a large bowl, whisk together the cottage cheese, eggs, garlic powder, onion powder, salt, black pepper, and paprika until well combined.
Combine the cooked turkey sausage and vegetable mixture with the cottage cheese mixture. Stir in half of the shredded cheddar cheese. Pour into a greased 9x13-inch baking dish and spread evenly. Sprinkle remaining cheddar cheese on top.
Bake for 30-35 minutes until set and top is golden brown. Let cool for 5-10 minutes before slicing and serving.
