Chicken
  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • as needed lime wedges for serving

Method
 

  1. Prepare the chicken by shredding leftover cooked chicken or cooking chicken breasts until fully cooked and shredding them.
  2. In a skillet, heat olive oil over medium heat, add shredded chicken, and sprinkle in chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Stir until well-coated.
  3. Cook the chicken mixture for about 5 minutes, stirring until heated through.
  4. Warm the tortillas in a skillet or microwave, then assemble tacos with seasoned chicken, shredded lettuce, diced tomatoes, cheese, and sour cream. Serve with lime wedges.
