Method
 

  1. Gather all your ingredients to ensure a smooth preparation process.
  2. In a medium bowl, whisk together the gluten-free flour, baking powder, and salt. In a separate large bowl, beat the eggs and sugar until light and fluffy, about 3-5 seconds. Gradually add the melted butter, vanilla, and anise extract. Mix until combined, then add the dry ingredients and stir gently until just combined.
  3. Preheat your pizzelle maker according to the manufacturer's instructions.
  4. Lightly grease the pizzelle maker and drop about 1 tablespoon of batter onto each mold. Close the lid and cook for about 30-60 seconds until golden brown. Remove and cool on a wire rack.
  5. Once cooled, dust with powdered sugar if desired and store in an airtight container.
