Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook for 5-7 minutes until browned. Remove and set aside.
  2. In the same pot, add onion, garlic, bell pepper, and celery. Sauté for 5 minutes until soft.
  3. Stir in Cajun seasoning, smoked paprika, salt, and black pepper. Cook for 1 minute. Pour in chicken broth and bring to a boil. Add uncooked pasta and cook according to package instructions, about 8-10 minutes.
  4. Reduce heat to low. Stir in cooked chicken, diced tomatoes, and corn. Let simmer for 5 minutes.
  5. Stir in heavy cream and heat through for a couple of minutes. Adjust seasoning if needed. Serve garnished with green onions and parsley.
