Pasta
  • 8 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Prepare the chicken by cutting it into bite-sized pieces and coating it with Cajun seasoning.
  2. Cook the penne pasta in salted boiling water until al dente, about 8-10 minutes, then drain.
  3. In a large skillet, heat olive oil and cook the seasoned chicken for 5-7 minutes until browned and cooked through.
  4. Sauté diced onion for 3-4 minutes, then add minced garlic and cook for an additional minute.
  5. Pour in heavy cream and chicken broth, stir, and simmer for 3-4 minutes until slightly thickened.
  6. Add diced tomatoes and shredded cheddar cheese, stir until cheese melts, then return chicken and add drained pasta, tossing to combine.
  7. Season with salt and pepper, garnish with parsley, and serve immediately.
