- Gather all ingredients in one place.
- In a large mixing bowl, combine chopped dried cranberries, chopped pistachios, and rolled oats. In a separate bowl, mix almond butter, honey (or maple syrup), vanilla extract, salt, and cinnamon until smooth. Combine wet and dry ingredients.
- Press the mixture into a lined 8x8-inch baking dish and refrigerate for at least 1 hour.
- After chilling, cut into squares or bars and serve.
