Beef Roast
  • 2-3 pounds beef roast (chuck or round) Ideal for slow cooking.
  • 1 cup cranberry sauce Canned or homemade.
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil For searing the beef.
  • 1 tablespoon fresh rosemary or thyme (optional) For garnish.

Method
 

  1. Gather all ingredients and prepare homemade cranberry sauce if using.
  2. Allow beef roast to sit at room temperature for 30 minutes.
  3. Combine marinade ingredients and marinate beef for at least 2 hours or overnight.
  4. Preheat oven to 325°F and sear beef in olive oil until browned.
  5. Pour marinade over beef, cover, and roast for 2 to 3 hours until tender.
  6. Prepare sauce by simmering cooking liquid until thickened.
  7. Let roast rest for 10-15 minutes before slicing.
