  • 2 tablespoons olive oil for sautéing
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 medium apple, peeled and diced
  • 1 cup shredded white cheddar cheese
  • 0.25 cup fresh cilantro, chopped (optional)
  • to taste sour cream for serving (optional)

Method
 

  1. Dice the chicken breasts into bite-sized pieces and set aside.
  2. Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until soft, then add minced garlic and cook for 1 minute.
  3. Add diced chicken to the pot and cook for 5-7 minutes until browned. Stir in cumin, smoked paprika, chili powder, salt, and black pepper.
  4. Add white beans, diced tomatoes, chicken broth, and diced apple. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Stir in shredded white cheddar cheese just before serving until melted.
