Dice the chicken breasts into bite-sized pieces and set aside.
Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until soft, then add minced garlic and cook for 1 minute.
Add diced chicken to the pot and cook for 5-7 minutes until browned. Stir in cumin, smoked paprika, chili powder, salt, and black pepper.
Add white beans, diced tomatoes, chicken broth, and diced apple. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
Stir in shredded white cheddar cheese just before serving until melted.
