Ground Beef
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 1 can (10.5 ounces) condensed tomato soup
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 cup frozen mixed vegetables (optional)
  • 1 tablespoon olive oil

Method
 

  1. Gather all your ingredients to make the cooking process smoother.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, about 7 to 10.
  3. Add 1 medium diced onion and 2 minced garlic cloves to the pot. Sauté for about 5 until the onion is translucent.
  4. Stir in the kidney beans, black beans, corn, diced tomatoes with green chilies, and condensed tomato soup. Add 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of smoked paprika. Season with salt and pepper to taste.
  5. Pour in 2 cups of beef broth. If using frozen mixed vegetables, add them now. Bring to a boil, then reduce heat to low and let simmer for 30.
  6. Taste and adjust seasoning if needed. Serve in bowls and garnish with fresh cilantro or shredded cheese if desired.
