Gather all your ingredients to make the cooking process smoother.
In a large pot, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef and cook until browned, about 7 to 10.
Add 1 medium diced onion and 2 minced garlic cloves to the pot. Sauté for about 5 until the onion is translucent.
Stir in the kidney beans, black beans, corn, diced tomatoes with green chilies, and condensed tomato soup. Add 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1 teaspoon of smoked paprika. Season with salt and pepper to taste.
Pour in 2 cups of beef broth. If using frozen mixed vegetables, add them now. Bring to a boil, then reduce heat to low and let simmer for 30.
Taste and adjust seasoning if needed. Serve in bowls and garnish with fresh cilantro or shredded cheese if desired.
