  • 2 cans sweet corn 15-ounce cans, drained
  • 1 can creamed corn 15-ounce can
  • 1 cup sour cream
  • 1/2 cup unsalted butter melted
  • 1 cup cornmeal
  • 1 cup shredded cheddar cheese
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained sweet corn, creamed corn, sour cream, and melted butter. Mix until well combined.
  3. Add the cornmeal, shredded cheddar cheese, sugar, baking powder, salt, and black pepper. Mix until fully incorporated.
  4. Pour the mixture into a greased 9x13-inch baking dish and spread evenly.
  5. Bake for 45-50 minutes until the top is golden brown and a toothpick inserted in the center comes out clean. Let cool for 10 minutes before serving.
