Ingredients
  

Coffee Mixture
  • 2 cups strong brewed coffee Make sure it's cooled before using.
  • 1/2 cup coffee liqueur Optional, adds depth of flavor.
Mascarpone Mixture
  • 3 large eggs Separated into yolks and whites.
  • 3/4 cup granulated sugar Sweetens the mascarpone mixture.
  • 1 cup mascarpone cheese Ensure it's at room temperature.
  • 1 cup heavy cream Whipped for lightness.
  • 1 teaspoon vanilla extract For flavor.
  • 24 pieces gluten-free ladyfinger cookies Essential for classic texture.
  • cocoa powder For dusting on top before serving.
  • dark chocolate shavings Optional garnish.

Method
 

  1. Prepare the coffee mixture by brewing 2 cups of strong coffee and letting it cool. Mix in coffee liqueur if desired.
  2. Make the mascarpone mixture by whisking egg yolks and sugar until pale and creamy, then fold in mascarpone cheese.
  3. Beat egg whites until stiff peaks form and fold into the mascarpone mixture. Whip heavy cream with vanilla extract and fold into the mascarpone mixture.
  4. Layer soaked ladyfingers in a 9x13 inch dish, alternating with mascarpone mixture.
  5. Cover and refrigerate for at least 240 minutes, preferably overnight. Dust with cocoa powder and add chocolate shavings before serving.
