Ingredients
  

Cookie Base
  • 2 cups gluten-free chocolate chip cookie dough store-bought or homemade
Ice Cream Layers
  • 1 quart vanilla ice cream softened
  • 1 quart chocolate ice cream softened
Toppings
  • 1 cup whipped cream
  • 1/4 cup chocolate syrup
  • 1/4 cup sprinkles optional

  • 9-inch springform pan

Method
 

  1. Prepare the cookie base by pressing half of the cookie dough into the bottom of a 9-inch springform pan.
  2. Preheat the oven to 350°F. Bake the cookie layer for 15-20 minutes until golden brown. Let it cool completely.
  3. Spread softened vanilla ice cream over the cooled cookie layer and freeze for 1 hour.
  4. Spread softened chocolate ice cream over the vanilla layer and freeze for another hour.
  5. Remove the cake from the freezer, release the sides of the springform pan, and spread whipped cream on top. Drizzle with chocolate syrup and add sprinkles.
  6. Return the cake to the freezer for at least 2 hours before serving.
