Method
 

  1. Preheat your oven to 350°F (175°C). Gather and measure all ingredients.
  2. In a large bowl, combine dry ingredients: almond flour, baking soda, ginger, cinnamon, cloves, and salt. In another bowl, mix wet ingredients: coconut oil, molasses, maple syrup, and vanilla extract. Stir until smooth, then combine wet and dry ingredients to form a soft dough.
  3. Chill the dough in the refrigerator for at least 30 minutes.
  4. Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated and powdered sugar. Place on a baking sheet, spaced 2 inches apart.
  5. Bake for 10-12 minutes until edges are set and centers are soft. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
