Ingredients

Dry Ingredients
  • 1 cup gluten-free all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips semi-sweet or milk chocolate

Equipment

  • 8x8-inch baking pan

Method

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8x8-inch baking pan by greasing it or lining it with parchment paper.
  3. In a large bowl, combine melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla extract, whisking until fully incorporated.
  4. In a medium bowl, whisk together gluten-free flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in chocolate chips and any additional mix-ins if desired.
  7. Pour the batter into the prepared baking dish and spread it evenly.
  8. Bake for 25-30 minutes until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the blondies to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
