Ingredients
  

Carrot Fritters
  • 2 cups grated carrots (about 4 medium carrots)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup olive oil (for frying)
Yogurt Sauce
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Wash and peel the carrots, then grate them finely and set aside in a large mixing bowl.
  2. In the bowl with the grated carrots, add flour, Parmesan cheese, eggs, green onions, garlic powder, salt, black pepper, and paprika. Mix until well combined.
  3. Form the mixture into patties, about 1/4 cup each, and place them on a plate.
  4. Heat olive oil in a skillet over medium heat. Fry the fritters for 3-4 minutes on each side until golden brown and crispy.
  5. For the yogurt sauce, mix Greek yogurt, lemon juice, dill, and garlic powder in a small bowl. Season with salt and pepper.
  6. Serve the fritters warm with the yogurt sauce on the side.
