Ingredients
  

Vegetables
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced (any color)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups potatoes, diced (about 4 medium potatoes)
  • 4 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup cooked and crumbled sausage (optional)
  • 2 green onions sliced (for garnish)
  • Chopped fresh parsley (for garnish)

Method
 

  1. Prepare the vegetables by dicing the onion, bell pepper, carrots, and celery, and mincing the garlic.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, bell pepper, carrots, and celery. Sauté for 5-7 minutes until softened.
  3. Add the diced potatoes, chicken broth, Cajun seasoning, dried thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and let simmer for 20-25 minutes until potatoes are tender. Mash some potatoes for a thicker consistency.
  5. Stir in the heavy cream and sausage (if using), and heat through for an additional 5 minutes. Adjust seasoning if needed, then serve garnished with green onions and parsley.
