  • 2 cups fresh or frozen blueberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Method
 

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine blueberries, 1/2 cup sugar, lemon juice, and vanilla extract. Stir gently and set aside.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, mix melted butter with milk. Combine wet and dry ingredients until just mixed.
  4. Pour batter into a greased 9x9-inch baking dish. Spoon blueberry mixture over the batter without stirring. Sprinkle remaining sugar on top.
  5. Bake for 45-50 minutes until golden brown and a toothpick comes out clean. Let cool for 10 minutes before serving.
