Ingredients
  

  • Flank steak thinly sliced against the grain: 1 pound
  • Soy sauce: 2 tablespoons
  • Cornstarch: 1 tablespoon
  • Vegetable oil divided: 2 tablespoons
  • Broccoli florets: 2 cups
  • Garlic minced: 3 cloves
  • Fresh ginger grated: 1 teaspoon
  • Cooked ramen noodles: 4 cups or 2 packages, seasoning discarded
  • Beef broth: 1/4 cup
  • Oyster sauce: 2 tablespoons
  • Sesame oil: 1 tablespoon
  • Red pepper flakes: 1 teaspoon optional
  • Green onions sliced: 2 (for garnish)

Method
 

  1. Marinate Beef: In a bowl, combine the sliced flank steak, soy sauce, and cornstarch. Mix well. Let it marinate for about 15 minutes.
  2. Cook Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until browned. Remove the beef and set aside.
  3. Cook Broccoli: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the broccoli florets and stir-fry for 2-3 minutes until they are bright green and tender-crisp.
  4. Add Aromatics: Add the minced garlic and grated ginger to the skillet. Cook for an additional 1 minute until fragrant.
  5. Combine and Sauce: Return the beef to the skillet. Add the cooked ramen noodles, beef broth, oyster sauce, sesame oil, and red pepper flakes (if using).
  6. Finish Stir-Fry: Toss everything together and cook for another 2-3 minutes until the noodles are heated through and the sauce coats the ingredients.
  7. Serve: Serve immediately, garnished with sliced green onions.

Notes

Vegetarian Option: Substitute the beef with tofu and use vegetable broth instead of beef broth.
Extra Veggies: Add other vegetables like bell peppers, snap peas, or carrots for extra color and nutrition.
Flank Steak: Always slice flank steak against the grain for maximum tenderness in your stir-fry.
Sauce Thickness: The cornstarch in the marinade helps to thicken the final sauce slightly.
