Mash the ripe bananas until smooth. Add honey or maple syrup, oil, eggs, and vanilla extract. Mix until well combined.
In another bowl, whisk together oat flour, baking soda, salt, and ground cinnamon.
Pour the banana mixture into the dry ingredients and stir until just combined. Fold in any optional add-ins.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
