  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon
  • 1 1/2 cups almond flour
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Gather your ingredients.
  2. Preheat your oven to 350°F.
  3. Mash the ripe bananas in a large mixing bowl.
  4. Add eggs, honey or maple syrup, melted coconut oil, and vanilla extract to the bananas and mix well.
  5. In a separate bowl, combine baking soda, salt, ground cinnamon, and almond flour.
  6. Gradually add the dry mixture to the banana mixture and stir gently until just combined.
  7. Pour the batter into a prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, checking for doneness with a toothpick.
  9. Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack.
