  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Gather your ingredients.
  2. Preheat your oven to 350°F.
  3. Mash the ripe bananas until smooth and mix with melted coconut oil.
  4. Combine gluten-free flour, baking soda, salt, and ground cinnamon in a separate bowl.
  5. Mix the banana mixture with brown sugar, beaten egg, and vanilla extract, then add dry ingredients.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
