Preheat your oven to 375°F (190°C).
Unroll the crescent roll dough on a clean surface and separate the triangles.
Cut the Brie cheese into small pieces, about one inch in size.
Take one triangle of dough, place a piece of Brie cheese in the center, fold the corners over the cheese, and pinch the edges to seal.
Spoon about a teaspoon of the cooled cranberry mixture on top of the Brie and sprinkle with pecans if using.
Place the assembled bites on a baking sheet lined with parchment paper, brush the tops with the beaten egg, and bake for 12-15 minutes until golden brown.
Let them cool slightly before serving.
