Ingredients
  

Chicken
  • 2 cups cooked chicken, shredded or diced
  • 1 ripe avocado mashed
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Method
 

  1. Prepare the chicken by shredding or dicing it into bite-sized pieces. If using raw chicken, boil or grill until fully cooked, then let cool before shredding.
  2. Prepare the avocado by cutting it in half, removing the pit, and mashing the flesh in a bowl until creamy.
  3. In a large mixing bowl, combine the shredded chicken and mashed avocado. Add Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Gently fold in the halved cherry tomatoes, finely chopped red onion, and fresh cilantro. Adjust seasoning if needed and serve.
