  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, granulated sugar, brown sugar, salt, baking soda, shredded coconut, and cocoa powder. Mix well.
  3. In a separate bowl, whisk together the egg, vanilla extract, and melted coconut oil. Pour the wet mixture into the dry ingredients and stir gently until a dough forms. Fold in the chocolate chips.
  4. Scoop out the dough using a tablespoon and place it onto a prepared baking sheet, spacing them about 2 inches apart.
  5. Bake the cookies for 10-12 minutes until the edges are lightly golden. Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.
